Do you feel it yet? The crispy bite in the air, the leaves turning yellow and – if you are in the UK – the spiders weaving their webs everywhere and on everything. Seriously! Overnight the same web from the same tree to the same streetlight appears to attack at the perfect face height the unfortunate person who’s the first one rushing towards the tube station. *yaiks* I have learned to avoid that trap, but there is gazillion other ones. But seriously, I am slowly beginning to feel the fall in the air. Maybe it’s just a mental feeling as the schools are starting next week plus the last summer Bank Holiday Weekend is this weekend. Do you guy have any great plans? I am going to just relax and eat ice cream. Yes, that’s my way of saying farewell to the absolutely gorgeous (now was is really gorgeous?!) summer! *sigh*

The whole summer I have been eating courgettes (or zucchinis if you wish) like a crazy person. I know. I just love them! Mostly I have been making zoodles (with my trusty spiralizer! Yes, I have one!) and stir frying them with a couple of cherry tomatoes, black olives and chilli flakes. Yum! So simple and so easy! I do also love zucchinis in muffins. Besides who says that muffins have to always be sweet. I kinda do, but… I absolutely love these Sweet Potato Zucchini Muffins with Feta Cheese. Super easy to make and you can have them for breakfast or even pack for that last summer picnic. Pretty awesome, right?!

Sweet Potato Zucchini Muffins with Feta Cheese

Preparation time: 20 minutes + baking time
Makes: 12 muffins

Ingredients:
2 Medium Sweet Potatoes
1 cup Shredded Zucchini (approximately 2 small zucchinis)
2 cups All-purpose Flour
1/4 cup Crème Fraise
1/4 cup Brown Demerara Brown Sugar
1 tsp Baking Powder
1 tsp Baking Soda
½ tsp Salt
½ tsp Ground Cinnamon
¼ tsp Ground Cloves
2 dashes of Ground Ginger
2 Eggs
¼ cup Vegetable Oil
1 Peel of an Orange Grated
200 gr Feta Cheese (cubed)

Directions:
Preheat the oven to 200 C / 375 F. Grease muffin pans or line them with muffin cups. With a fork pierce the skins of the sweet potatoes. Place them into the microwave and microwave them on high for approximately 8-10 minutes or until soft. Let cool. Shred the zucchinis. Cube the feta cheese. Grate the peel of one medium orange. In a bowl mix together flour, sugar, baking powder, baking soda, salt and spices. Set aside. Cut the sweet potatoes into halves and with a spoon scoop out the flesh. In a separate bowl mash the sweet potato until smooth. Add the eggs, creme fraise, oil and the grated orange peel. Mix well. Add the shredded zucchinis and the feta cheese. Lastly add the flour mixture while continuously mixing. With a large spoon fill the muffin cups with the muffin batter. Bake for 30 minutes or until golden brown. Cool on a wire rack.

      I do love muffins! Sometimes it’s fun to have salty ones as well! Plus these are ‘half healthy’ with all that zucchini and sweet potato in them.
