On the first day of Christmas – ok, so I mean December – I made Jamie Oliver Snickers Semifreddo, which is my all time favourite Christmas dessert! Exclamation marks to infinity and beyond!!!! If there ever has been a perfect Christmastime dessert this IS IT. Trust me on this! I have tried and retried Jamie Oliver Snickers Semifreddo for several years now and it has never let me down.

If you — like me — enjoy watching Christmas cooking specials, you might have caught this recipe on Jamie Oliver’s Christmas Special which originally aired several years ago. I happened to catch it on telly then and got enchanted by this amazing looking dessert (originally called Marathon Semifreddo) Jamie made. That Christmas was the first time I made Snickers Semifreddo for Christmas Day dessert and after that it has become a classic which I make every Christmas.

I might even go as far as to declare that Christmas is not Christmas without Jamie Oliver’s Snickers Semifreddo, Love Actually, Finnish Glögg, super fabulous cheese board and Wham’s Last Christmas. All shared with friends and family under the twinkling Christmas lights.

Jamie Oliver Snickers Semifreddo is a fabulous holiday dessert as you can make it well in advance. It keeps in the freezer for a long time. And if you are planning to serve it on several occasions just use smaller freeze-proof dishes, so you don’t have to take the whole amount to soften each and every time. Snickers have never tasted this good! I promise!

Jamie Oliver Snickers Semifreddo

Preparation time: 45 mins (plus freezing time overnight)
Serves: 12
Please note: This recipe contains raw eggs

Ingredients:
1 Vanilla Bean
55 g Caster Sugar
4 Large Eggs
500 ml Whipping Cream
Pinch of Sea Salt
5 bars of Snickers (41 gr bars)
50 g Good Quality Dark Chocolate

Directions:
Split the vanilla bean lengthways and scrape the seeds out. Set the seeds aside. Finely chop four of the Snickers bars. Finely shave the dark chocolate with a sharp knife. Place the four finely chopped Snickers bars with the finely shaved dark chocolate into a heat-proof bowl and set aside. Finely chop the last Snickers bar and keeping it separate set it aside (this is for topping the Semifreddo). Separate the egg yolks from the egg whites. In a large bowl whisk the caster sugar with the vanilla seeds and egg yolks until the mixture is pale. In another large bowl whisk the whipping cream until it forms soft peaks – take care not to over-whisk. In a third large bowl whisk the egg whites with a pinch of sea salt until firm peaks form. Place the heat-proof bowl containing the finely chopped Snickers and dark chocolate over a saucepan of simmering water on a low heat. Make sure that the water does not touch the base of the bowl. Leave the chocolate to soften slightly for a couple of minutes. Remove from the heat and leave to cool for a few minutes. If the slightly melted chocolate sticks together break it away with a knife or fork. Gently fold the whipped cream into the egg yolk mixture. Then carefully fold the egg whites with a large metal spoon into the mixture. Spoon half of the ready mixture into a freezer-proof dish. If you plan to serve the Semifreddo at several occasions it’s a good idea to use several smaller dishes. Gently taking care not to knock out any air from the mixture fold the softened chocolate pieces into the remaining mixture. Add the mixture with the Snickers into the freeze-proof dish(es) on top of the plain Semifreddo mix. Gently with a stick or a knife swirl the two mixtures together in the dish. Sprinkle the remaining finely chopped Snickers bar on top. Cover the dish and freeze. Leave the Snickers Semifreddo in the freezer at least overnight. Take the Snickers Semifreddo out of the freezer about half an hour before serving it to give it time to soften.
