Happy Halloween to Everybody! It’s the time of the year when pumpkin rules, the more weirdly you dress the better it is and candy is everybody’s favourite currency. As you, me and the odd dark-haired guy next door get ready to celebrate the spookiest night of the year let me show you cuter side of Halloween with these Quick Halloween Digestive Spider Cookies with Pumpkin Spiced Icing. Before you judge me I will admit that I simply cannot stop trying to add pumpkin spice (or pumpkin pie spice as it’s officially known) to everything at this time of the year. But then again when the dark and cold December days hit the calendar in full swing, I will try to add 1. mulled wine, 2. cranberries and 3. any kinda booze into everything I make. Watch this space! But for now as there is only one day left of the ghoulish October it is pumpkin spice FOREVER for me (for one more day).

Quick Halloween Digestive Spider Cookies with Pumpkin Spiced Icing

Preparation time: 30 min
Makes: 20 spider cookies

Ingredients:
20 Digestive Cookies
20 Orange M&Ms
40 Silver Sugar Balls
Royal Icing no 1:
250 gr Royal Icing Sugar (for hard icing)
2 tsps Pumpkin Pie Spice (McCormick)
40 ml water
Royal Icing no 2:
65 gr Royal Icing Sugar (for hard icing)
10 ml water

Step by Step Directions:
1. Transfer the digestive cookies onto a cooling rack or an oven tray.

2. Make the Royal Icing no 1: In a large bowl mix the Royal Icing Sugar with Pumpkin Pie Spice. Add water. Whisk with an electric mixer until soft peaks form (3-4 minutes).
With an icing knife or a spatula evenly spread a thick layer of Pumpkin Spiced Icing on top of a digestive cookies. Wipe the knife of any extra icing. Dip the icing knife in hot water and smooth the icing on top of the cookie. Wipe the knife. Repeat until all the cookies are iced. Gently press an orange M&M onto each icing covered digestive cookie.

3. Make the Royal Icing no 2: In a large bowl whisk with an electric mixer the Royal Icing Sugar with the water until soft peaks form (3-4 minutes). Add orange food colouring until you have reached desired orange colour. Transfer the orange icing into a piping bag and pipe two small dots on the M&M on each cookies. Place a silver sugar ball on top of each orange icing dots on top of the M&Ms.

4. Pipe 3 spider legs on both sides of each M&M with the orange icing. Leave the Digestive Spider Cookies to completely dry before transferring into a storage container.
